So I have a 70' Sport Fury 2 bbl 383. Built late in 1969. November. I'm pulling the engine and casted on the side of the block is 383 69. So my 383 is built in 69'. My question is, would it have the 69' or 70' compression ratio? I don't want to assume anything.

You'd have the compression for the 1970 model year which began in August 1969, I believe.
 
And yep, compression is a bit higher in 69. Same can be said for the 440.
 
I'm just reaching I guess. I'm freshening the 60,000 mile 2 bbl 383 I have in my Fury. Super clean inside, bearings all look good. Wanted to leave bottom end alone, and just throw some shim head gaskets in, new cam, lifters, springs, timing set, hp manifolds, dual exhaust, single plane intake, FITECH efi and hope for better performance and reliability.
 
the gear ratio has not been mentioned but may I suggest the weiand or eddy dual plane intake. I think you will want more low end. my humble opinion.
