I'm a little confused? If offer up cars so people can get parts they may need for their ride they will be upset? I should restore them instead?

It's a owners judgement call. If the owner feels the car is too far gone, not worth the restoration cost, doesn't have the desire to restore or feels that it's better to sacrifice the car so others can be restored. So be it. Also if parting one car serves the financial purpose or means to complete another, again it's up to said owner.
