Help with tunning eddy carb

I have a 1967 Plymouth fury III with a 440 bored 60 over making a 454. It has all stock internals and a eddy avs2 800cfm for electric choke. Anyways I'm trying to figure out the best setup of springs metering rods and jets to use in the carb.
 
First thing would be to look at the spark plugs after several miles of driving. Should be a light tan color on the ceramic. Chalky white indicates "too lean". For starters.

Check the jet/rod spcs against the factory carb for a 440HP motor, on the primary side. There might not be much difference between your AVS2 and the stock jetting.

Then, look for a hot rod shop that has a chassis dyno. SpeedTek, locally, has one. Seems like there's another store in OK, or used to be part of the old Super Shops group? OR find somebody with a big tune-up machine that can measure air/fuel ratio. With the car in "P", check the ratio at about 2000rpm. Aim toward 14.0-14.2. Then, put the car in gear and load the engine against the foot brake. Watch at what vac level the mixture enriches, which should be below about 7.5" Hg or lower (most Holleu 4bbls start at 10.0"Hg with a two-stage power valve, but that's a minor step, as the full-on power mixture happens at more like 5.5" Hg).

With the carburetor, you should have received an Owners Manual which can detail such things. If you did not get one, it's on the Edelbrock website in the AVS2 section (along with the as-built jetting specs).

What intake manifold, cam, and exhaust system on the car? What is the current idle speed, which is hopefully as low as it can be to decrease transmission engagement driveline shock, if it's a TF?

You might discover things are pretty good as is, possibly.
