I am getting ready to put the car back together and will be using a new wiring harness. I was comparing the old harness and noticed an extra red wire going from the alternator to ground under the voltage regulator bolt.

Any idea why that is done? Does it do something?

More than likely someone back in the day was having trouble with the charging system and found that the alternator was not grounded properly through the brackets and added the wire. I always try to add a ground from the alternator to the block or the chassis when wiring a car to help make sure the system has everything it needs. This wire was never on the harness from the factory. It was added in. I would redo it and add one back in when redoing the harness under the hood. It is impossible to have too good or to many grounds!

Ok, that was my suspicion as well. I'll add the extra ground then too.
