Congrats on picking up this beauty! I had one just like it many years ago, great car for eating miles on the highway. I'd forgotten how much the dash evolved between my 69 Polara and this generation. Like both, just for different reasons!
FWIW - my 1969 Polara 500 2-door had wood grain and the chrome tulip. The black accent, chrome and wood grain really looked sharp, certain that was the factory ship configuration for that vehicle.

You might try using a short piece of hose (garden hose works great) as sort of a stethoscope to help find the leak. One end near your ear, the other poking around looking for hissing...
Given the uncertainty of what is hiding inside the old pump and carb, I'd certainly second the advice to put in the new pump and rebuild the carb. Great tip about making sure it's the right pump (or set correctly if adjustable) for your flow rate!
