So how much of a Cardinal Sin is it to build a 440 and install that instead of the original 383?

Super cool wagon! I think Monaco's are even rarer than the Plymouths and Chryslers. At least in my neck of the woods. You're probably going to miss it after it's gone.
Depends on your plans for the car. If you want a correct show car, keep it original as possible. If this is to be a fun driver, then it is your choice. I would probably rebuild the 383 and upgrade it to a HP factory cam and a 4BBL. The 440 is a bolt in as long as the engine is internally balanced it will fit your existing transmission. You will need to change the exhaust as the 440 sits higher and wider than the 383. 440's are nice to have, but in a big car they usually do not get much over 10mpg with a carb, so fuel cost can be an issue if you plan to drive it a lot.
