It took me all weekend...

Well I bit the bullet and bolted the reman booster in, only took about an hour and a half, way better time now that I have all the tools at the start! Had to get a different check valve as both the old one and the one that came with this booster had a stem going straight into the master cylinder.
Took it for a quick spin around the block and the brakes are working great! Which is a double win since they've never been in full working order since I bought the car.

The only oddity was that when coming to a complete stop with my lights and turn signal on it seemed like the engine was going to stall with all my lights slowing and then disappearing. Everything was fine when giving the engine gas. I nudged the idle speed up a little bit and seems to be doing better, and I bought a new voltage regulator to see if that improves things.
