Hello, I recently posted a question about putting some slightly wider tires (and ergo, wider rims) on my 1969 300. I'm leaning heavily towards 235/70/15s up front and 255/70/15s on the back, running on seven or eight inch wide rims. I know it may depend on what brand/type I get, but will I need spacers and if so, what size?

@Wollfen has a set of C body road wheel for sale right now. For Sale - Road Wheels $300
I have a set of 235.70.15 tires on 5.5in rims now on my GT and they sit fine, I think a 7in rim may be a bit much for 235/70s.

225/70x15 tires on 7” wide rim work just fine. Any narrower rim squeezes the tire imo.

Note:
You’ll find that most reputable and all chain tire stores will not install tires on a rim not within the “recommended” rim width dimensions. An issue I ran into searching for tires for my original 14”x5.5” wheels.

4 1/2 backspacing on the wheel is all you need. No spacer.
I'm really liking the American Racing Outlaw rim, but it's 3.75. Will that still work? There's a similar one from US Wheel with 4.5, but never heard of that brand.

Unlikely , that would imply the front spacing is larger than normal. Start taking measurements...
