I work in a very old industrial complex. In our shop they have been replacing the old shop lights with the ufo's. Some like them others don't. They're probably 30 feet up. The complaints are they are too bright, too white and if you're looking up to work on something you're not able to see well because of them.
Any of the light styles can work well in my opinion. You hit on the biggest factor - placement. Someone that doesn't work in their garage puts 1 or 2 lights up turns them on when nothing is in it and says it's great. Thinking about where you'll be working and what maybe causing shadows will save you lots of frustration.
I would talk to a local electrical supply company tell them what you want to do and ask them if anyone local has used those types of lights that you might be able to go look at their set up.
